Pumpkin Pie Filling2 cups mashed pumpkin 3/4 cup sugar1 teaspoon cinnamon 1/4 teaspoon ginger 1/4 teaspoon cloves 1/4 teaspoon nutmeg2 eggs 1 can evaporated milk2 tablespoons melted butter

Instructions

1. Let the children do most of the measuring and preparation for the pie. Work in small groups, letting children take turns with your supervision. Be sure to emphasize washing hands, not putting hands in mouth, and other health precautions.

2. Help the children measure 2 cups of pumpkin and add it to the mixing bowl.Author Note: For a richer learning experience, cut up your classroom jack-olantern, wrap it in foil, and bake at 350 degrees until it is soft enough to scrape out with spoons. When it cools, the children scoop it out. You can also use canned pumpkin, one can per pie.

3. Ask the children to measure 3/4 cup of sugar, leveling with a knife, and add to the pumpkin. Let them take turns stirring the mixture.

4. Let them measure spices on a piece of wax paper. Encourage the children to compare the colors and smells. Add spices to pumpkin and stir again.

5. Crack the eggs into a small bowl. Let the children take turns beating. Add to pumpkin and mix.

6. Add milk and stir.

7. Add melted butter and stir.

8. Pour into the mixture into pie shells. (An adult should do this!)9. Bake at 350 degrees until knife blade inserted in the center comes out clean.

10. Let cool. Cut into slices and enjoy!
