Materials

Mixing bowl

Hand or electric mixer1 cup (250 g) shortening1 cup (170 g) brown sugar1 cup (250 g) white sugar3 beaten eggs1 teaspoon (5 ml) vanilla1 1/2 cup (190 g) flour

Sifter1 teaspoon (7 g) salt1 teaspoon (5 g) baking soda1 teaspoon (5 g) cinnamon3 cups (270 g) quick cooking oatmeal1 cup (160 g) raisins3/4 cup (70 g) coconut

Wax paper

Refrigerator

Blunt knife

Cookie sheet

Oven

Instructions

1. Cream shortening, brown sugar, and white sugar in a large mixing bowl until it is light and fluffy.

2. Mix in the vanilla and eggs.

3. Sift flour with salt, baking soda, and cinnamon. Add it to the mixture.

4. Mix in oatmeal, raisins, and coconut.

5. Form the dough into two long rolls and place them on a piece of wax paper.

6. Place the dough in the refrigerator and let it chill overnight.

7. The next day, cut the dough into 1/4 " (1 mm) thick slices and place them on a cookie sheet.

8. Place the cookie sheet in the oven and bake at 350 degrees for 10 minutes (adult only).
