Materials

Freshly cut dandelion leaves (best in early spring)Paper towels

Large tray for leaves

Two small clear glass bowls for dipping

Olive oil

Balsamic vinegar

Small paper plates

Instructions

1. Take the children outdoors to gather fresh dandelion leaves. New early shoots are best!2. Wash the leaves and dry them on paper towels. Place them on a tray.

3. Allow the children to serve themselves and to dip the leaves into the oil and then the vinegar.

4. Enjoy!More to doMath: Make a graph of the children's responses, their likes and dislikes. Bring a clump of dandelions into the classroom for observation. Conduct a survey on how many dandelions are in the children's yards.
